Our Story

How it all Started

In 2006, Vail resident Steve Kaufman was having dinner on the east side of the pass, as he often did, and saw a “For Sale” sign on a large building in Dillon. Formerly a high-end Mexican restaurant, he knew a lot of money had been put into the building and its elaborate decorations inside before the establishment closed.

As a restaurant and nightclub owner in Eagle County, Kaufman saw the potential of the place, and snatched it up, opening Red Mountain Grill a few months later on Nov. 6, 2006. Unlike the original restaurant housed in the building, this one has become a fixture in the local Dillon, Summit County area.

“We do a lot of local business and I appreciate all the people that come in and patronize the place all the time,” Kaufman said. “I like to have the same people come in all the time. We love our locals!”

How it all Started

Formerly a high-end Mexican restaurant, he knew a lot of money had been put into the building and its elaborate decorations inside before the establishment closed.

As a restaurant and nightclub owner in Eagle County, Kaufman saw the potential of the place, and snatched it up, opening Red Mountain Grill a few months later on Nov. 6, 2006. Unlike the original restaurant housed in the building, this one lasted, celebrating 17 years this year.

“We do a lot of local business and I appreciate all the people that come in and patronize the place all the time,” Kaufman said. “I like to have the same people come in all the time. We love our locals!”

The restaurant serves up what Kaufman calls casual gourmet with a Southwest flair, “with a lot of spices and lots of flavor; the menu is diverse,” he said. Furthermore, Red Mountain Grill offers great Happy Hour Specials, as well as Specials specifically geared for the football and basketball fans that can watch the games on our Big screen TVs and enjoy our delicious foods. Our new Motto is: “Good Food, Good Sports, Good Times” — we love when our guests join us and watch their favorite Sports, and enjoy our inviting atmosphere with good food and drinks.

On Saturdays and Sunday, guests can enjoy a fantastic Brunch with Mimosas, a selection of 5 different Bennys, Pancakes, Omelets and Huevos. There’s something for everybody.

Kaufman attributes his success in the industry to a great Happy Hour, using fresh ingredients made from scratch and having a great staff. “The staff is really important, and they get along with the local community,” he said. “Locals … they see the same faces when they come in.”

So now that we survived and navigated the pandemic which was quite tough in itself, we felt that it was time for re-branding and to give Red Mountain Grill a fresh and revived look. We wanted to give our patrons and potential guests something new to look forward to: New Logo, new Website, new signage, updated menu, all the way to branded uniforms and some retail items, like caps and T-shirts that are available for purchase at the restaurant.

Chef Skyler joined us a little while ago with some new menu items which we are very excited about. We value our employees, so we wanted to give them a modern and fun look for their uniforms as well that reflects Red Mountain Grill’s brand and at the same time, apparel that they love to wear to represent us. Breathing some fresh air so to speak into our operations, especialy visually. We still serve the same great food, and we are still known for our very unique and cool metal light fixture interiors that everyone likes so much.

Rebranding positively impacts customer perception, which positively impacts customer behavior, and we wanted to get the attention of all our customers – old and new, tourists and locals alike!
